Vitamin K, also known as the “Forgotten Vitamin”, has been linked to prostate, bone and health of the heart; but recent research has also linked this vitamin to cartilage and joint health. Vitamin K is found in green vegetables, cheese and the fermented soy product, natto.
Constantly overshadowed by other more popular vitamins, vitamin K has been found to be essential for strong and healthy bones. It is a “fat soluble” vitamin which acts as a kind of biological glue by bonding the calcium to the bone. Recent studies have shown vitamin K to work just as well as some types of osteoporosis drugs such as Fosamax.
The glue in question is a protein called osteocalcin in which vitamin K plays an important role in its production.
I would like to add a quick word on the phrase fat soluble for people who are unsure of its meaning. In order for your body to effectively absorb it, you should eat some fats with it. One way you could do this is to add butter, coconut oil or olive oil to your vegetables.
There are three types of vitamin K simply known as K1 K2 and K3, but to ensure that you levels of this most important nutrient eat plenty of the following:
Collard greens
Spinach
Salad greens
Kale
Broccoli
Brussels sprouts
Cabbage
Natto
Eat your greens – as our mothers were continually telling us- is as true now as it ever was.This is another good example of eating a healthy diet for long term good health.
